It also allows the system to pull coolant back from the overflow tank as things cool down, which prevents air pockets from forming in the lines.

When one of these caps starts going bad, usually what happens is it either won't hold the required pressure or it won't release it properly. If it's not holding pressure, you'll start seeing coolant boil out of the overflow tank way too easily, especially when the engine's working hard, and your temperature gauge might creep up more than usual.
